Since we were short on time, I made my new favorite meal. Tuna salad on a bed of spinach (3 cups) with sliced straberries (5 large ones) and 25 almonds (dry roasted, unsalted.)
My friend Melissa made this for me for lunch about 2 weeks ago. I never would have thought that strawberries and tuna would taste good together. I know I have eaten this at least 6 times since being served it. Thanks Melissa for feeding me a healthy meal! Of course being a dinner portion, I used a whole can of tuna and more spinach.
